Royal icing..at last

I always wonder how to make purely snowy white cream. I remeber I hd done it long time ago during my teen age but I just couldnt figure out! Well, last week I as usual watching Nigella episode at Astro 703 channel. Yes..my wish come true. She was teachung the technique to make the cream that I want..Royal Icing!!!! Yes..yes..yes..

The next day, i experiment it. Wallah...

Recipe for Royal Icing

2 white eggs

175gm icing sugar

2 tble spoon lemon/lime juice

method: whisk the white eggs until its fully. Normally the volume become double. Then pour in the icing sugar. Beat it with high speed until it become smooth and a bit thicken. Then pour in lemon/ lime juice. Remember, place the icing when the cake is cold. Do not place it during the cake still warm because the icing will melt. You can also color the icing with food coloring up to your desire.

My Collection Part 5

Both cake I bake for my lil angel 1st bday, Amani Balqis. She turns to 1yr old on 24/11/2009. However, we did the celeb on 5/12/2009. Venue, our lovely home.

Her sis was so excited about all the baking cake activities. I drove her to the bake supplies shop. she did request and ask 1001 things..that was a good moment!


In the beginning, i had no idea what type/ flava to bake. But in my mine i had planned for some blueberry and lemon flava. After preparing all the required ingredient, I have decided to bake butter cake with blueberry filling and orang cake with chocolate lemon filling. FYI, I hv to bake 2 cakes since the eldest will get jealous if she doesnt hv.

It was hectic experience. Chaos in my kitchen. On top of the bday cake, I had also bake some cuppies..why I bake it..no answer for that. I think I just wanna make sure the party turns out with colourful dishes and food to be enjoy.

However, I couldn't figure out why my butter cream not up to my mark at that time. Something goes wrong with the ingredient but I just cant figure it out! It turns out quite sweet and my hubby's uncle did make a comment about it.

For info, each cake weight app around 3-3.5 kg. Well, eventhough quite tiring and my messy kitchen, I do really satisfied with the result. But, I need to polish my decorating skill.

Tips: To those that thinking using pebble chocolates for decoration (M&M/ Smarties), eventually M&M gv more vibrant color. But, is the melamine issue settle? I am not to sure!

My Collection Part 4

This collection was a cake that I bake for my MIL, Mama for her 53rd bday. She did not like topping so much. So, I just bake butter cake (since she likes butter cake) with lemond orange butter topping. However, I do not have enough time to decorate. It turns out quite bad..but the taste..superb!!! HAPPY BIRTHDAY MAMA!

My Collection Part 3

This cake i baked for my nieces and nephew that celebrating their b'day very closed to each other. Una was born on 25/9/1999 and Imi was born exactly the same date but 2yrs later. Aiman was born on 4/10/1993. So..we round-up the bday bash!
I bake very simple cake..butter cake with chocolate orange almond filling. Decoration..what ever that left in my cabinet!

Alhamdulillah, they like it! Infact, starting from this cake I hv started to experiment other type of filling. I enjoyed seeing people mesmerizing the 'treasure' between the cake layers! It is an accomplishment for me! My hubby always says.." I just impress from where you get the tought!"...:P

A nice leftover.........

From the previous post, we were unable to finish up the stick. Since it was to good to be landed in the trash, i came out with a new recipe..Fettucini with grill beef. I love to cook pasta because it is an easy meal + healthy + simple and everybody can enjoy it. luckily, eventhough quite fussy in food selection but he do love pasta (as long as no fish!)


However, there was slightly problem with this pasta. some how, there flour taste of the fettucini quite strong and horrible. I had rinsed it couple of time but still couldnt get rid of it. Well...what a waste for a nice meal!!!

What to cook if only beef in your freezer?

I was so lazy to drag myself (not just my self but with the 2 angels) to go to Carrefour. in my freezer, only left beef. I got bored with beef actually! 2 days in a row our main course was beef! Eeeeeyuuuuik! Well, since I was lazy..tonite again beef as a main course.


I thought of something different than our normal menu. I wanted to grill the beef. Beef stik for tonite!! But because of I hs a lil angel to feed, I still have to cook rice...emm waht type of rice that nice with beef stick? I remembered watching Greek Kitchen episode couple of nite ago..morrocan rice. So..i decided to cook it but I do have to alter the recipe since some ingerdients was not available.


Then, my meal will not be complete if without veggie. I serch my fridge and I found mayonnis. Coleslaw will be nice with stick. As the result..my angles ate a lot and my hubby said GREAT! Me?...really satisfied!


Simple Beef Stick Recipe:
  1. Beef
  2. Shallots
  3. Garlics
  4. Oregano
  5. Basil Leaves
  6. Corriander
  7. salt
  8. Veggie oil
  9. Onion

Clean the beef. Blend all the ingredient 2-7. Marinated the blendered ing wt the beef. left it about 3-4 hours. Than, heat the oven at 220 Celcius. When the oven ready, place the beef in the grill pan. Put some oil. Cook the beef for about 1.5 hours. After the beef cooked, put the chopped onion and grilled it back for 5-10 mins until the onion caramalized. Its done!



The taste quite similar to nasi minyak. But with out cinnamon, clove, cardamon & clove flovers. My daughters love it!

My Collection Part 2




Both collection were ordered by my MIL's fren. SME Bank staff. It was for her Aidilfitri Open House. She ordered for 100 cuppies. 50 in blue and 50 in pink. I bake choc flavor cakes with butter topping. The pink collection, I topped it with flower dec (fondant based). For blue collection, I had grated pink chocolate bar and topped it with marshmellow. I charged her Rm 350 for this.


Actually this collection for my unofficial Aidilfitri Open House 2009. Unable to think of any orther desert to make, cuppies were the easiest at that point of time. Infact, I was trying to sharpen my skill on placing/ decorationg the buttercream. I had added all the leftover buttercream and the photos shows the result!

Nice to see but not nice to eat!!!

I do have problem with jelly!!!. My mom always said it is simple as ABC to cook and prepare jelly.. But why i never success? I had bought a packet of jelly couple months back. I always wanna cook it but some how something stopped me. It's like my sense told me not to cook it because it will turn up horrible taste!
However, last couple of days I was clearing up my book shelf. During clearing process, I had slipped one of old mag. It shows colorful jelly recipes! Then, I remember the poor packet of jelly that i bought! I had decided to do exactly like the written recipe.

That nite, after my lil angel asleep I cooked the jelly. With a passion, I stayed up until 2am to do it. Then I chilled it in my fridge. Wait till tomorrow to taste it!


The pic show the result. I was so glad it turn out to be as I expected. My eldest daughter eager to eat. She cut it and eat it..but her face did not look enjoy eating it. Then, I tk a cut...eeeyyuuuu not nice!!!!!!!!
Well, i shall do it again next time till i found perfecion in this jelly skill!!!!

My collection..............

The above cuppies I made specially for my niece wedding on last may 2009. The flowers and leaves I made from fondant paste. Fondant that I dough myself. (sticky..sticky job!). The cake choc falvor and top with butter cream.
The yummy strawberry cuppies I baked it for my MIL. She ordered for some celebration at her office (SME Bank). During baking this, I was blank with idea. Therfore, just grab a pack of strawberry and wallah..perfection turns up! At first i thought of just plain strawberry on top of the cream. But it turns out to be so nude...Then, the choclate topping make it more vibrant (I guess!)

This was ordered by my sis, Along zai for her cousin engagement. To be frank..i can't get the purple colour that I desired. I do have problem with the fondant dough actually for this set. However, it's still considered ok..


Ha..ha..this were my collection from my 1st baking class. I hd attended class by Apple kitchen in Pandan Indah. the course fee very reasonable. Rm 150. My intention for this class was I wanted to learn in making fondant. Thnakx Melinda (the intructor)..now I can consider my self quite expert in making fondant dough (not the decoration yet!). Hey, the fresh fondant dough is also on sale..whoever interested call me. The price..RM 15/kg.




Twinkle, twinklw lil star...Ain forced me to bake cuppies one night..It was started after we came back from Carrefour and I bought flour. She insisted, nagging me all the way that we must bake cake that nite. I thought just enough with the cakes. But then..she insist on decoration! That was the result!!!

It has been years I didn't use piping bag. Ha..ha..horrible isn't it?




Choc cup cake with butter icing

About my passion in baking cake, I should thanks to a friend of mine, Rizal. One day, he walked over to my desk (when I was working in Ridpest) and shered with me blog belongs to his friend. A few photos of nice+cute+wonderful cupcakes and cakes just simply stunning my attention.




Straight away after came back from office that day, I started baking again..I chose one of simple choc cupcake recipe from the net and I bake it rite away..all my tiredness of chaos and messy kitchen paid off after my first bite of the yummy moist choc cupcake with butter cream.....my hubby said well down and my MIL said good job too..Choc cupcake with butter cream

The recipe as below:

For the cake:
1 cawan serbuk koko
1 cawan gula pasir
1 cawan susu cair
1 cawan minyak masak
1 cawan susu manis
1 1/4 cawan tepung gandum
1tsp baking powder
1 tsp soda bicarbonate
3 biji telur

Method:
Campur koko,gula,susu cair,susu manis dan minyak ke dlm periuk dan masak sebentar atas api kecil sehingga semua larut.
Tepung,soda dan baking powder di ayak satu.
Telur dipukul kembang dan dicampur dng campuran koko tadi.Gaul rata dan capur tepung.
Gaul sebati dan tuang dalam acuan dan jangan sampai penuh sebab nanti adunan naik.
Bakar selama 20 mins at 170 degrees celsius

For BUTTERCREAM
1/2 cawan shortening
1/2 cawan mentega, dilembutkan
1 sudu the esen vanilla
3 cawan gula
2 sudu besar susu segar

Method:
Dalam mangkuk pembancuh, pukul mentega, shortening dan esen vanilla. Masukkan gula satu cawan dalam satu masa dan pukul sehingga rata sebelum masukkan gula yang seterusnya.
Masukkan pula susu segar dan pukul sehingga buttercream menjadi ringan dan gebu.

I cant remember from which website i got this recipe. Hope the owner do not mad at me since I share the recipe here. Anyway, this is really simple recipe and easy to do. Even kids can do it..I guess. What I mean is, for any one that just started to bake or just would like to try to baking, I shal lrecommend you this recipe. Ok..hv fun!

Beside Playhouse Disney Channel (obviously controlled by Ain..my charming eldest daughter), I do excited waiting to watch Nigella or Anna Olson. Not to forget Chef at Home as well.
